It took me a few months of playing with the idea of parmesan cheese crisps to nail a healthy preparation for them. They are admittedly one of my guilty pleasures, and when I saw them popping up in my local grocer’s, I knew I needed to create a good recipe for them to keep myself from going broke. Surprise, surprise, my toddler also loves them. This is one kid-friendly snack that is quick and easy to prepare, and doesn’t take much planning or clean-up!
Prep Time: 1 minute
Cook Time: 20 minutes
Yield: 8 servings
2 cups shredded parmesan cheese (That’s it! Simple, right?)
1) Separate cheese into 8 small piles.
2) Place four piles on the silicone baking mat. Spread each out to form thin circles, no more than 2 shreds thick each.
3) Bake at 350 F for 20 minutes, or until grease from cheese is expressed, and the cheese begins to brown (just slightly) in the center as well as the edges.
4) Take out and cool for 5 minutes before eating or serving as a garnish. This will give the cheese a crispy, cracker-like consistency that is absolutely irresistible.
